Dean
originally got this recipe from her sister-in-law, Geraldine "Jerri"
Bonnell. It is now made at every Spiker Family Reunion as well as every
family get-together at home. From her children to her great-grandchildren,
it's everybody's favorite. The trick to getting good taste is using rich,
homemade chicken broth. Don't substitute store bought chicken broth unless
you really doctor it up. Dean saves chicken broth in the freezer from
every chicken dinner she makes to use in her homemade noodles. |

Ingredients: |

1 beaten egg
1/2 tsp salt
2 Tbs canned milk
1 Cup flour
Chicken Broth

Directions: |
|
Combine egg, salt & milk in
large bowl. Add enough flour to make a stiff dough (usually all of it,
sometimes a little more). Roll very thin on floured surface. Let stand 20
minutes. Roll up and slice 1/2 inch thick. Unroll slices, spread out, and
dry 2 hours. Drop into boiling chicken broth and cook 10 minutes or until
done. |

These days, Dean uses a manual pasta machine at its widest setting to
flatten and cut the strips. Saves time but noodles should still be left to
dry. For all of her family dinners, she makes at least 4 to 5 times what
the recipe calls for. For the reunion, she makes 6 to 7 recipes. |
