Aunt Dean's Homemade Noodles


  • 1 beaten egg
  • 1/2 tsp salt
  • 2 Tbs canned milk
  • 1 Cup flour
  • Chicken Broth


Combine egg, salt & milk in large bowl. Add enough flour to make a stiff dough (usually all of it, sometimes a little more). Roll very thin on floured surface. Let stand 20 minutes. Roll up and slice 1/2 inch thick. Unroll slices, spread out, and dry 2 hours. Drop into boiling chicken broth and cook 10 minutes or until done.


These days, Dean uses a manual pasta machine at its widest setting to flatten and cut the strips. Saves time but noodles should still be left to dry. For all of her family dinners, she makes at least 4 to 5 times what the recipe calls for. For the reunion, she makes 6 to 7 recipes.
