Wild Rice Summer Salad

INGREDIENTS:

  • 3/4 c. uncooked wild rice (black rice)
  • 1/4 c. chopped onion
  • 1/2 c. celery, sliced
  • 1/2 tsp. salt
  • 1 tsp. dry mustard
  • 1/4 c. brown sugar
  • 1/4 tsp. pepper
  • 1/3 c. mayonnaise
  • 4 eggs (hard boiled & sliced)

DIRECTIONS:

Cook the wild rice as in basic preparation for 30 minutes. Sauté the celery and onion until tender. Cool. Combine all ingredients. Toss well and chill.

COMMENTS:

Makes 5 servings.
